These super easy-to-make double chocolate scones are delicious but not overly sweet, perfect for a less sugary treat. If you prefer them sweeter, simply add more sugar.
1. In a bowl, mix the almond milk and apple cider vinegar. Let this mixture sit for at least 10 minutes to curdle and create a vegan 'buttermilk'.
2. In a separate large bowl, combine all the dry ingredients (oat flour, cacao powder, baking powder, coconut sugar).
3. Add the 'buttermilk' mixture, sunflower seed butter, vanilla, and flax eggs to the dry ingredients. Mix until a dough forms. If using, fold in optional chocolate chips.
4. Roll out the dough and cut it into triangles. You can brush more sugar on top for added sweetness and sparkle, if desired.
5. Preheat your oven to 400°F (200°C).
6. Bake the scones for 20-23 minutes, or until golden brown and cooked through.
